Toda's coffee: [[Black and White The House that Gesha Built]]. Up to this point, I haven't really gotten enough out of gesha to justify its price. But I decided to check this out anyway because I was curious about what Black and White was doing with it. A blend, with coffees that would normally always be sold as single origin, is interesting, and it's also always interesting when a roaster is telling you this coffee represents them in a different way or to a different degree than their other coffees. As a baseline, I brewed it as a quick [[Pourovers#Orea]] brew, 55 clicks on the [[Pourovers#ZP6]], with a lower temp bloom and a bit lower brewing temp overall, on the premise of this maybe preserving some of those delicate volatiles (lol so pretentious). Results were pretty muted. Hot, it tasted like very generic coffee, with a bit of roast on it. Cooled it was better, with some sweetness, a little refreshing and mouth watering. Acidity still quite muted. Will try some other recipes/approaches. I'm curious about how it'll do in the [[Pourovers#Hario Switch]] with a hybrid percolation/immersion recipe, and I should definitely also try brewing it as bypass or iced.
