![[Pasted image 20241001105357.jpg]] Today's coffee was [[Black and White Edwin Noreña Strawberry Blossom]], which is a sort of blend combining multiple different funky processing methods. Early third wave purists tend to look down on this kind of coffee, where fruit notes are being added into the coffee rather than just being teased out of the beans themselves. I think they're often pretty fun and tasty, but I don't know if I would feel the same way if, for example, they were just "artificially flavored" instead of undergoing these often somewhat pretentious processing steps inspired by the wine industry. It would be genuinely interesting to see someone have a go at trying to make "fake" specialty coffee tbh.
