## General Notes on Nomad and J-Max - Hard to figure out dose. Since the shower screen does not intrude into the basket at all, in theory it should be a _good_ idea to overfill the basket. In practice, 16g seems like a very safe number for the coffees I drink, and up to 18g is still fairly practical if I'm careful when loading the basket. - Ballpark grind range seems to be 1.2-1.5 give or take. - Slow feeding requires going several steps finer - 1:3-1:5 ratios seem to suit my coffees and preferences - Pre infusion followed by 4-6 bar pressure, declining, seems to be relatively reliable ## J-Max - [Grind Setting](https://1zpresso.coffee/grind-setting/) - [Manual](https://1zpresso.coffee/manual-jmax-en/) - Espresso range per manual is 1.0 to 1.6 where Rotation.Numeral. Low bitterness, acidic but also sweet. | | Cat and Cloud Ethiopia Kercha (Medium Roast) | | 1.3 | 1:2 | 17 | 34 | PSPH | 6 bar | I think probably relatively traditional result. Mild acidity, bittersweet. Not unpleasant to drink straight, but not my personal favorite coffee experience. | Note: RW Desvelado after a few weeks pulls very fast at the same or even quite finer grind setting. Still fa Note: resetting zero point based on official guidance: new zero point is 0.1.3 coarser than the old zero point. Post calibration El Paraiso totally turbos at 1.5.8 which should be a fair bit finer. Hmm. Oops went backwards lol. Anyway El Paraiso 1.3 14.5 in 35 out at 6 bar is pretty good but quite strong and a little overextracted. MT Teshome T Teshome 1.3.5 choke city BW Elkin Guzman Strawberry 1.3.0 is basically spot on for 6 bar. Older el Paraiso decaf 1.2.5 good at 6 bar FC Astrid Medina overloaded 20g 1.4.0 7-8 bar pretty good but could go coarser by quite a bit with the added dose. Great as an aerocano. ## Milk Drink Ratios | Drink | Ratio | Notes | | ------------- | --------- | -------------------------------------- | | Macchiato | 1:1 | | | Cortado | 1:1 - 1:3 | Longer ratio coffee used traditionally | | Piccolo Latte | 1:3 - 1:4 | | | Americano | 1:3 - 1:6 | Optionally skim off crema | | Long Black | 1:3 - 1:4 | Traditionally with double ristretto | | Cappuccino | 1:3 - 1:4 | 1-2cm of foam, more dry in texture | | Latte | 1:4 - 1:7 | | | Flat White | 1:2 - 1:4 | 180ml total | | Mocha | | There's some chocolate in there | | Breve Latte | 1:4 - 1:7 | Half and half | | Gibraltar | 1:2 | | The vagueness of boundaries between in the cortado-flat white-piccolo spectrum is annoying. ![[Pasted image 20230519000902.png]] ## Long Ratio Espressos | Profile | ZP6 | Pressure | Flow Rate (Avg) | Target Weight for 14g dose | Total time | | ----------------------- | ------ | --------- | --------------- | -------------------------- | ---------- | | Normale (for reference) | | 6-9 | 1-2? | 28-42 | 25-30 | | Lungo | 10 | 6-9 | | 42-84 | 25-30 | | Flower Child Lungo | | 5 bar | | 56 | | | Turbo | 15-20? | 6 | 2.6 | 28-35 | 15 | | Allonge | | 8-9 | 3 | 70-90 | 30 | | Sprover | 25-30 | 1-1.5 | 4.5 | 150-160 | 40-60 | | Filter 2.0 | 15-20? | 3 or less | 3 | 70 plus 150-180g water | 1.5-2 min | ## Espresso Recipes - [Flower child](https://youtu.be/b26-8Q_J1MA) - 4-7 weeks off roast - 1:3.5-4 ratio - 15/60 - Use low pressure (5 bar recommended) - [Immigrant Culture](https://youtu.be/Gk4GIp758p0) - 1.5-2 weeks off roast - 1:2 - 5bar for 5-9 sec, then 9 bar for 28-32s - [Brian Quan](https://youtu.be/GsOEqTFavYo) - Sprover - 1:12 ratio - Aeropress-V60 grind range - 4.5ml/s flow - 40-60 seconds - 1-1.5 bar - Lower temp - 150-160g out w/14g basket on Nomad - [Allonge](https://youtu.be/2SvbWV8UvnQ) - 1:5-1:7 - Coarse espresso grind - 8-9 bars - Maintain pressure as puck degrades - 14g in, 70-90g out - 15g in, 75-105g out - Blooming Espresso - Fine grind - Pre-infuse up to 5 bar, stop - Bloom 10-30s - Ramp to 8-9 bars - Adapted Londinium - Preinfuse at 3 bars until drops - Ramp to 8-9 bars - Reduce preinfusion time for darker roasts - [Coffee Chronicler](https://coffeechronicler.com/allonge-vs-lungo-turbo-shot-sprover/) - Turbo - "Coarser" grind - 15-20g dose - 6-9 bar - 40g in 15 seconds - Flow rate 2.6g per second - Allonge - "Bit coarser" grind - 1:5 ratio - 30 seconds - 18g in, 90g out - 3g per second - Modern Lungo - "Grind coarser" - 15.5 in, 80g out - 4-6 bar - Sprover - 1:10 - 16g in, 160g out - 1-2 bar - Lower temp - [Sprometheus](https://youtu.be/arX52LS55dw) - Turbo Shot - 15g ground coarse-for-espresso - 15 second shot - 40g yield - 2.67g/s - Modified Turbo Shot - 17g - Slightly finer than standard turbo - 18-20 seconds - 40g yield - 2g/s - [Allonge](https://youtu.be/orhtImgJyn8) - 35-40s - 1:5-1:7 - 10s pre-infusion - Go to 9 bar, then decline while maintaining flow rate - 3-4g/s - Hedrick - Turbo Shot - 6 bar or less - 3x weight - Under 20s - Rao - Filter 2.0 - Paper Filter - 90C pre infusion 85C brew - Two minute bloom - 3g/s flow - Not quite espresso fine - 5:1 ratio - Don't exceed 3 bar - Intelligentsia - [PSPH](https://youtu.be/dTpKo5ul3XA?t=1114) - Low pressure until 3g in the cup - Ramp to 3-7 bars - Decline rapidly - Very short shot time # Coffees | Vendor | Origin | Name | Varietal | Process | Roast | Vendor Flavors | Notes | | ------------- | --------- | ------------------------------------------- | ---------------------------- | --------------------- | ------------- | ---------------------------------------------------------------------------------------------------------------------------------------------- | ------------------------------------------------------------------------------------------ | | Rogue Wave | Colombia | Condor Decaf | Caturra | EA Decaf | Medium | Cocoa, Mandarin, Honey, Guava | I've struggled to brew this without more acidity than I want | | Rogue Wave | Honduras | Benjamin Paz La Orquidea | Catual & Pacas | Honey | | Fig Jam, Caramel, Pear, Floral, Milk Chocolate | I don't think I made this work, but that was prob. my fault | | Rogue Wave | Brazil | ==Fazenda Um Yellow Bourgon== | Yellow Bourbon | Shade dried natural | light | Cherry, Peach, Lemon, Molasses, Chocolate | I was able to get okay results with this by using a high extraction recipe | | Rogue Wave | Guatemala | ==Entre Volcanes San Miguel Mill== | Caturra & Bourbon | Washed | light | Cherry, Apricot, Chocolate, Toffee, Praline | Pretty good on Hoffmann 1 cup.
